Rachel told RSVP Live: "It is such a lovely time, all the well wishes and all that it is a really really nice time. I did not know that was coming at all - it was such a lovely surprise."
Rachel, who is the sister of influencer Roz Purcell, shared that she has not started thinking too much about the wedding plans yet: "I actually haven't thought too much yet about a wedding, just right now the priority for us would be a house, so I think that's kind of our focus for right now - and also I think I'll let Roz and Zach go first and get their wedding out of the way!"
Roz and her fiancé Zach shared their engagement news in August of this year, just two months before her sister followed suit.
Rachel and her fiancé Kevin started their own coffee shop, Fetch Coffee, together during the pandemic as they first started to settle into Tipperary.
Rachel shared that often times clubs may even meet in Fetch, and it' has been a 'lovely way' to connect with the wider community in the area: "It's been a lovely way to be part of the community again, we've just gotten to know so many people.
"Obviously I'm from just outside of Clonmel but I hadn't lived there for years so it's been lovely to get to meet people that way, Kev's from Galway, and he kind of knows more people now than I do."
Connecting with the nature of Tipperary has also been a priority for the couple, as Rachel shared her new role as ambassador of the 'Get Ireland Active' campaign.
Rachel shared that the resources from the campaign have been a great way to discover new trails and hiking spots in her local area: "I suppose it's hugely important for me especially having moved back to Tipperary - you know when you want to find out what clubs are in the area.
"As you know I absolutely love hiking so figuring out what different trails there are around, and it just makes it really easy to get all of the information, and really encourages everyone to get active which is hugely important."
Speaking about the importance of getting active, Rachel said: "The most important thing for me about 'Get Ireland Active' is just that it's accessible for everyone - no matter your age, or your ability, or your fitness level.
"It makes sure it's accessible for everyone no matter what, and just really highlights all the different activities that are available in your local area as well."
