Amidst the lockdown, Eric's entertaining videos gained unprecedented popularity, amassing over 20 million views.
Consequently, he made the heartfelt decision to conclude his tenure at Mulroy College in Milford, Donegal by the end of May, wholeheartedly embracing the exciting prospects that awaits him.
Speaking to RSVP Live, Eric said "It was a big decision stepping away, I suppose the decision was kind of made for me this year."
"I've been so so busy. It would've been silly not to take the opportunities that I was been offered."
"It was surreal on the last day. It was almost cliche that I was walking around almost mentally saying goodbye to everything.'
The 32 year old admitted it was a bitter sweet moment, "It was very dramatic. But at the same time, the reason I'm leaving is really positive. It was a mix of emotions."
Eric's online content features his 17-year-old nephew, Oisin Roberts Browne, who has autism and cerebral palsy.
Eric revealed that Oisin played a significant role in inspiring him to pursue a career as a special needs assistant and adds "I'll never really leave that part of my life entirely behind. I'm gonna continue to work with children with disabilities."
Excited for the future he added "There's some huge projects coming up later this year and you'll definitely see me on your screens.
I won't be able to tell you whereabouts or what I'll be doing but later in the year I'll be happy to give you an exclusive" he laughed.
Heading down under for the World Cup there are lots of plans ahead for the TikTok star, "I have Australia next week and I have some more exciting events over the summer, and then obviously the wedding."
He met his teacher fiancée when they were teenagers and knew each other for years before the relationship turned serious four years ago.
When asked about his wedding plans he said "I try and take a back seat but recently the pressure's been on. I've been under the knife, under lock and key for the last couple of weeks."
He continued, "I've been told I've done nothing, come on and help. So, we went and got the rings today."
"Everything's left to the last minute, but we're ticking off as many boxes as we can before I head off to Australia."
